Empirical was founded by chefs. We're not following any kind of category ruleset or formula; we make what we make because it tastes good. We use alcohol as a vessel for new flavours, focusing on experience over intoxication. Our spirits should be served in a wine glass with a single ice cube. Try pairing them with food.
